Lemon Blueberry Scones

I have been wanting to make some scones for a while now.  Spring is definitely in the air and I think anything with lemon just screams spring!  These have a wonderful lemon flavor and the blueberries just burst in your mouth.  Wonderful!!  They also have some health factor with the whole wheat flour and yogurt.  Glazing is optional as they taste great without it but I recommend using the glaze to dress them up and give them the extra wow factor.

  • For the Scones:
  • 1 c. whole wheat flour
  • 1 c. all purpose flour
  • ½ c. granulated sugar
  • ¼ tsp salt
  • 2 tsp baking powder
  • 6 TBSP unsalted butter, cubed
  • 1 large egg
  • ¼ c. plain greek yogurt
  • ¼ c. lemon juice
  • 1 tsp lemon zest
  • ½ c. fresh blueberries
  • For the Glaze:
  • 1 c. powdered sugar
  • 2 TBSP lemon juice
  • 1 tsp lemon zest
  1. Preheat oven to 350.
  2. For the scones combine the flour, sugar, salt and baking powder in a large mixing bowl.
  3. Add in the butter and cut in with a pastry cutter.
  4. Add in egg, yogurt, lemon juice and lemon zest. Combine well.
  5. Dump onto work surface and gently work in the blueberries.
  6. On a parchment lined or greased baking sheet shape the dough into an 8" circle. Cut into 8 wedges but don't separate.
  7. Bake for 25 minutes and remove from oven and cut again. Separate and return to the oven for 10 additional minutes.
  8. Cool completely before glazing.

    Can I use red cherries instead of blueberries? Would it differ the taste much?

      Sure you can use cherries. It sounds like it would taste really good.
